1 Purple Yam, cooked and refrigerated overnight, cubed
1 Garnet Yam, cooked and refrigerated overnight, cubed
1 Japanese Sweet Potato, cooked and refrigerated overnight, cubed
1 ½ TB Ginger, grated
¼ Cup Red Onion, finely minced
2 Scallion, thinly sliced on the diagonal
½ Cup Cilantro, stems removed and finely chopped
3-4 Limes, juiced
Salt
Cayenne

Combine all ingredients in a large mixing bowl. Gently toss until well combined. Adjust seasonings.
